Um I think it's just how the characters are encoded? I don't actually know myself the technical details. :(

Well there is an ebook matrix http://wiki.mobileread.com/wiki/E-book_Reader_Matrix that should give you the lowdown on all the devices.

However, the two real choices seem to be the Kindle and the Sony PRS-505/700 (I have a PRS-505) I like it because it supports more formats and I don't buy ebooks ever so I don't need access to any ebook store.
