To be more specific does anyone know of any good long Bashir stories? I'm kind of totally falling in love with his character and don't even know where to start to find good fics for Deep Space Nine.

I have found some good stuff in older fandoms at AO3. Also, Ad Astra has some seriously long novels in the DS9 section, and the first one to show up has an award. Whatever that's worth. I've never seen the show, so I'm not that helpful.
You know, I got into Smallville fandom by reading fic first. So, if you come across any stories that someone unacquainted with the show could read, send them my way!

Well, they are not the longest stories ever, but thehoyden @LJ (sorry, my LJ user tag isn't working!) has some amazing Bashir/Garak stories that are my favorite for that pairing, here: http://thehoyden.livejournal.com/tag/fic:%20deep%20space%20nine. The best is Letters from the Northern Continent, set post-series. It's kind of hard to find good long Bashir stories since so much of the fandom was originally on listservs and zines. If you like the Garak/Bashir pairing I can probably dig up some other stories.
Okay! A Dark Stone for a Heart is a great post-series story from Bashir's POV. Then there's the Garak & Bashir Mysteries series, which is super long, and even though it kind of ends up seeming a little out of character, it's such an dramatic story that I couldn't stop reading. Oh, and this story is an awesome re-write of the episode "Doctor Bashir, I Presume" that obviously focuses on Bashir.
And it's a lot of work to dig through, but this rec list has some great stories in it. I've also had luck going through the Garak/Bashir tags on Delicious, though I ended up having to use the Wayback Machine to access many of them. There's also the LJ comm, Doctor, Tailor, which is definitely an exercise in patience to go through, but it was worth it for me when I was in my Garak/Bashir fic obsession.
This is a great start! :) I hadn't realized so many people on my flist liked DS9 (which I now realize is a bit silly since they are on my flist for a reason!)
I really wish DS9 had been aired a few years later than it was, just so the fandom would have more of an online presence. It's my favorite of the Star Trek franchise and it's too bad there's not more fanfic online. There's been a recent upswing in the LJ comm lately, I think because the new Star Trek reboot kindled peoples' interest, so that's been kind of neat.
It's kind of funny I've been having the same thoughts wishing that this was aired recently because it would have been great to watch it with fandom. When it aired I think the internet was still new and I missed the entire fandom while it was airing.
I've come to the conclusion that I may just have to write my own DS9 fics.
The problem is I kind of want more Quark stories because I think he is by far my favorite character on the show. So if I did end up writing anything it would have to be about Quark. Or Bashir. I actually love all the characters.
Here's a fic that I read a long time ago, managed to find it again on Fanfiction.net. It's long and involves time travel. I will warn you that there's Bashir whumping, but that's one of the reasons I love it. Oswiecim by Gabrielle Lawson (http://www.fanfiction.net/s/3636/1/Oswiecim)
It's been a while since I read it, but Julian ends up in 1943 on Earth during World War II. I think he ends up pretty beat up and there is original character death. It involves the Holocaust. If I remember correctly, there's no sexual violence.
Hmm that's kind of a shame. But the rest sounds good. I was kind of hoping for some sort of non-con. However, this story has been recommended in many places so I'll give it a shot for that reason alone. :) The summary didn't exactly say much about the story.
Okay I found another one that I remember. It has plenty of violence and non-con. Gul Dukat forces Bashir to become his slave. It has some spoilers for events and characters that happen later in the series, but it's not a prominent part of the story. It just adds to the enjoyment.
